Cold chain logistics generally refers to a systematic project in which frozen food is kept in a prescribed low temperature environment in the production, storage, transportation and sale, and in all links before consumption, in order to ensure food quality and reduce food consumption. The requirements of cold chain logistics are relatively high, and the corresponding investment in management and capital is also larger than that of ordinary normal temperature logistics.

 The scope of application of cold chain logistics includes: primary agricultural products: vegetables, fruits; meat, poultry, eggs; aquatic products, flower products. Processed food: frozen food, poultry, meat, aquatic products and other packaged cooked food, ice cream and dairy products, chocolate; fast food raw materials. Special commodities: medicines, so it is more demanding and complex than the general normal temperature logistics system, and the construction investment is also much larger. It is a huge system engineering. As the timeliness of perishable food requires higher organization and coordination of all links in the cold chain, the operation of the food cold chain is always related to energy consumption costs. Effective control of operation costs is closely related to the development of the food cold chain. Domestic consumption of meat products will increase from 2.5 million tons to about 13 million tons in 2010, and there is huge room for future growth. China's meat processing industry has gone through the market start-up stage, just in the growth stage. This stage is characterized by the rapid growth of consumer groups and the continuous growth of output and sales. The per capita occupancy of major meat products is at the advanced level in the world, and the per capita occupancy of meat products is far lower than that of developed countries. In the next 10 years, meat processing industry will enter a new period of rapid development. Meat consumption has greater growth potential in rural areas besides expanding in urban areas. With the acceleration of urbanization in rural areas and the improvement of farmers'income, meat consumption will continue to grow for a long time. By 2010, the per capita annual consumption of meat products in China will reach 10 kg, and the proportion of meat products in total meat production will rise to about 13%, but it will only reach the level of 1/3 meat conversion rate in developed countries.
